For the pak choi with cashew nuts, cut the red onion into narrow wedges. Cut the red cabbage very finely.

Heat the peanut oil to very hot in a large preheated wok or heavy skillet.

Add the onion wedges and sauté until they begin to brown, about 5 minutes. Add the red cabbage to the wok as well and sauté for another 2-3 minutes.

Add the pak choi to the wok and sauté for 5 minutes until the leaves start to fall together. Drizzle the plum sauce over the vegetables, mix through and heat until the liquid starts to reduce.

Sprinkle with the toasted cashews and arrange on warmed plates.
