Instructions:

Drain the peas and mix them in a baking bowl with the water and the other ingredients to form a paste**.

Heat the frying oil. Use a teaspoon to make small dumplings from the pea paste and slide them into the hot oil. Fry until golden brown, remove and drain. Repeat the process until all the dumplings are fried, then bring to the table on the spot.

This dish can be served as an entrée, as a snack with an aperitif, or even with afternoon coffee, or as a spicy accompaniment to a curry.

*Shrub peas (Cajanus cajan) processed.
