Caramelize the sugar in a copper pot until golden brown, add the red wine, lemon zest and cinnamon powder, cinnamon stick, juice of one lemon and cloves. Heat, stirring continuously, until shallow and bubbling, seasoning with sugar to taste. Bring to the table hot.

Tip: Cook only with high-quality spices – they are the be-all and end-all in a good dish!
