Mix yogurt, sour cream, yellow beets, apple cubes glazed in Calvados and potato cubes, season with salt, pepper and lemon juice. Dissolve the soaked gelatine, stir in quickly and finally fold in the whipped cream and chopped herbs. Line the dessert dishes with cling film, fill halfway with the mixture, place the matjes fillets in the dish and chill in the refrigerator for approx. 3 hours.
