For the marzipan mascarpone cream with port wine plums, first mix all ingredients for the cream well together. Pour into glasses or other ramekins and refrigerate.

For the plums, caramelize the sugar in a pan. Add the plums, butter and star anise. Deglaze with port wine and quickly reduce slightly. The plums should keep their shape.

Put some of the lukewarm plums on top of the cream, serve the rest separately. Garnish marzipan mascarpone cream with port wine plums with some lime zest and fresh mint.
