Ingredients for 4-6 people:
Soak the lentils in hot water for 10 minutes. Drain and drain. Heat the oil in a large heavy-bottomed saucepan and sauté the onion with the spices for 3-4 min at a low temperature until soft.
Add the bell pepper pieces and the lentils and braise for another 4-5 min. Stir several times so that the spices are evenly distributed.
Add the vegetable soup, bring to a boil and simmer gently with the lid on for 10 min.
Add the coconut milk, stirring, and continue to simmer with the lid closed for 35-40 min. Cool down a bit.
Blend the soup until it is smooth and creamy. Season with salt and pepper and heat again before serving.
