For garnish:


Remove the peel from the mangoes, remove the stones and cut them off. Place in a suitable bowl with sugar, juice of one lemon and dissolved gelatin. Stir well, the sugar must be completely dissolved.

Fold the whipped double cream into the mango mixture. Pour onto a metal tray and place in the freezer until the mixture is half frozen. Remove, beat with hand mixer until smooth. Pour back onto the tray and freeze until firm.

When serving, garnish ice cream balls with fresh mango slices and mint sprigs.
