For the gnocchi with pumpkin vegetables, peel the celery and cut into cubes. Blanch the tomatoes until hot, peel and also cut into cubes. Peel onion and shallots and cut into eighths.

Heat oil in a large pan, sauté onion briefly, add pumpkin flesh, celery cubes and sauté briefly. Season with salt and pepper. Then add the tomato cubes.

Add the balsamic vinegar. Add a little water. Put the lid on and cook the vegetables until they are soft. In the meantime, cook gnocchi in a pot of boiling, salted water until they float to the surface.

Strain and arrange on plates. Put the vegetables and some liquid on top. Sprinkle with herbs.
