Turkey Ragout with Fennel

Cook long grain rice in boiling hot salted water for approx. 20 min. Rinse meat, dry and cut into cubes.

Peel the orange and remove the white skin. Remove the fillets, reserving the juice. Remove peel from onions and cut into cubes. Clean fennel, putting the green aside. Cut fennel into wedges.

Fry meat and onions in hot oil. Sprinkle with flour and sauté. Extinguish with chicken broth and bring to a boil. Add fennel. Cover and cook for 10 minutes.

Add orange fillets, juice and pepper. Season again. Sprinkle fennel greens over ragout. Serve with long grain rice.


Chicken broth in a microwave dish form. Cover and cook at 600 watts for about 8 minutes. Mix in rest of soup, whipped cream and flour. Heat ragout at 600 watts for another 3 minutes. Season to taste.
