For the Easter cookies, preheat the oven to 190 degrees. In a large bowl, cream butter and sugar until fluffy. Add the eggs and beat until smooth. Add flour, baking powder and salt and mix through.
Mix through orange juice and orange zest. Roll out the dough on a floured work surface to a thickness of 6 mm.
Using a round cookie cutter (can be any other shape), cut out cookies. Line a baking tray with baking paper. Place the cookies on it and put them in the oven to bake for 8-10 minutes until golden brown.
Let the cookies cool completely on a cooling rack. Decorate the Easter cookies with icing as desired.
