A simple but delicious cake recipe:

Cut butter into small pieces, knead quickly with 150 g flour, 50 g sugar, 1 egg yolk with hands as cold as possible until smooth dough. Shape into a ball, wrap in plastic wrap and refrigerate for 1 hour. For the filling, squeeze the curd cheese in portions in kitchen towel.

Beat remaining egg yolks with remaining sugar until creamy, add curd cheese and remaining flour. Preheat electric stove to 175 °C.

Grease cake springform pan. Remove peel from apple, quarter, core and cut into wedges. Fold into the curd with the raisins.

Roll out half of the dough on a floured work surface. Cut out a circle the size of a springform pan and place in the pan. Cut the remaining dough into strips (5 cm wide) and line the sides of the mold. Whip the 3 egg whites until stiff, fold into the curd and fill into the mold.

Place in the oven on the 2nd rack from the bottom, bake for 40-45 minutes (gas: level 2).
