A simple but delicious cake recipe:

(*) For 1 cake springform pan of 24 cm ø Cover springform pan base with parchment paper, butter the edges.

Stir butter until peaks form. Add cinnamon, sugar, vanilla sugar and egg yolks, continue mixing until pale.

Mix in curd cheese. Beat egg whites with salt until stiff. Add sugar, continue beating until the mixture is glossy.

Combine semolina, cornstarch and baking powder, fold in just the snow and pears. Pour the mixture into the prepared mold, spreading it smoothly.

Bake in the lower half of the oven heated to 180 °C for sixty-five to seventy-five minutes. Cool in the mold.

Remove cake from pan, set aside to cool with lid closed. Garnish before serving.

Instead of pears, use apples or possibly berries. Replace spelt semolina with wheat semolina.
