For the zucchini cream soup, first wash, peel and finely slice the zucchini. Melt the margarine and brown the flour. Add milk and water and bring to a boil. Season.

Add zucchini and simmer gently for about 25 minutes. Puree the soup with a hand blender, season to taste and add a little more seasoning if necessary.
