The steaks are placed in a suitable container, rubbed with the juice of one lemon on both sides. The vessel is placed with the lid closed and in the refrigerator until the coal is ready to grill.
The tortillas are wrapped in aluminum foil.
Put the steaks on the grill at low heat. See separate note.
Grill the steaks for 7-9 minutes for “rare” to “medium”. They are turned over once.
The tortilla parcel is placed on the outer edge of the grill about 5 min before the end of the cooking time and left there for about 5 min. Also turn once to the other side.
Top each steak with a quarter of each type of cheese about 1 min before the end of cooking time.
Trim the outer fat from the steaks and serve.
The best accompaniment is a fresh tomato salsa.
Hold your hand about 10 cm above the coals. Medium heat “forces” you to remove your hand after 4 seconds.
