Strain the pineapple pieces, reserving the juice. Remove eight pineapple pieces and set aside for garnish.

Mix the curd with the pineapple juice, vanilla sugar and brown sugar. Fold in the whipped cream.

Pour the remaining pineapple pieces into dessert bowls and sprinkle each with some coconut. Pour the curd cream on top and sprinkle with brown sugar.

Put 2 of the set aside pineapple pieces and 1 candied cherry on skewers and garnish the dessert bowls with them.

Serve the cream immediately.
