Dice apricots, cream light butter, sugar and juice of one lemon, add eggs gradually and fold in. Mix flour and cornstarch, sift and fold in.
Then fold in chocolate chips and apricot. Fill the dough into a well-greased cake springform pan (diameter 26 cm), bake for 45 to 60 min at 175 °C (make a cooking test). Remove the cake from the pan and cool. Decoration: Knead the raw marzipan, powdered sugar and egg whites together well, roll out the mixture and spread over the cake.
On top, crush milk chocolate, white chocolate, melt in a hot water bath. Paint the contours of the mouse face with sugar writing and fill with milk chocolate. Leave out ears and nose and fill with dark cooking chocolate.
Set everything: Paint on the nose, whiskers and mouth and then colorfully decorate the cake as desired.
