For the New Year’s Eve muffins with eggnog, mix the flour with baking powder and sugar in a bowl. Add eggs, melted butter and eggnog and mix well.
Now fill 3/4 of the mixture into molds and bake in a preheated oven at 180 °C for about 20 minutes and let cool.
Cut out larger circles for the face and smaller circles for the nose from the rolled fondant.
Cut out triangles for the ears from the offcuts. Paint the mini marshmallows with a black dot each for the eyes.
Warm the punch icing, spread on the cupcake and place the large circle for the face on top of the cupcake.
Glue on nose, ears and eyes using the wooden stick and honey. Bend the ears and notch the nostrils. Serve the New Year’s Eve muffins with eggnog.
