Allow the milk to bubble up. Remove the pot from the stove.

Mix the water and vinegar. Slowly mix the vinegar solution into the boiled milk. As soon as the milk curdles, stop. Pour through a kitchen towel and squeeze out as much liquid as possible. Hang the cloth and drain.

Makes about 575 grams of paneer.
