Beat egg whites with salt, juice of one lemon and half of the sugar until firm.

Boil milk with sliced vanilla pod and pulp. Beat yolks with remaining sugar until creamy.
Remove vanilla pod, add milk to the egg yolk foam.
Pour vanilla sauce onto plates, place snowballs in the center, garnish with fruit.
