The duck is cleaned, the inside is salted and rubbed with thyme.

The onion is finely chopped and fried in a little oil until translucent. Now mix the fried onion with the crumbled ribs soaked in cow’s milk, squeezed and crumbled, the chopped duck liver and the egg. The smoked meat is ground or chopped, pepper, red wine, salt, thyme, grated ginger and chopped parsley are added. Stir the mixture and fill the inside of the duck. Close the opening with roulade needles and put the chicken in an ovenproof dish lined with buttered foil. Roast for 50 to 60 minutes in the hot oven. Now open the foil, pour vodka over the roast and roast for another 1000 cmin in the hot oven.

Our tip: Use fresh thyme for an aromatic flavor note!
