Instructions:

For apricot jam, first pit apricots and cut into small pieces.

Gently simmer lemon juice, apricot pieces and preserving sugar over low heat until apricots break down.

Once the apricots are soft, bring the mixture to a boil and simmer for 7 minutes until bubbly. Make a jelly test.

Fill apricot jam into hot rinsed jars. Put some alcohol on the lid, light it and close the jars tightly.
