Cut bacon and onions into cubes, leek into rings, mushrooms into slices. Fry bacon in butter, onions and leek, add mushrooms and cook until soft.
Blanch tomatoes, peel and dice, add to vegetables with chopped parsley and season with pepper, paprika, salt and thyme.
Form the vegetables in a greased gratin dish, make four depressions and put a beaten egg in each one, sprinkle with salt.
Sprinkle casserole with cheese and breadcrumbs and place in preheated oven.
