For the apple pie with almonds, prepare a shortcrust pastry from flour, butter, marzipan and sugar, knead with a little ice water if necessary and chill covered for 30 minutes.For the filling, whisk yolks with 2 tablespoons water, sugar and vanilla sugar until foamy. Beat the egg whites until firm.
Roughly grate 3 apples, mix with the chopped and ground almonds and mix into the egg mixture. Finally, carefully fold in the beaten egg whites.Line a springform pan with the shortcrust pastry, raise the edge slightly and spread the apple mixture over it.Peel, core and slice the remaining 2 apples over the cake, drizzle a little melted butter over them and cover with the whole almonds. Put the apple cake in the oven preheated to 180°C.Bake for 20 minutes, then cover the cake with baking paper and bake for another 20 minutes. Finally, spread the apple-almond cake with warmed jam – e.g. apricot or apple jam – and leave to cool.
