Instructions:

For the fassoláda, soak the beans overnight in cold water.

Then drain and cook in 3 liters of water (without salt) in an open pot (about 1.5 hours). In between, always skim off the foam that forms.

In the meantime, chop the vegetables and sauté in olive oil. After about 1.5 hours, add the vegetables and the rest of the ingredients to the soup and continue cooking until the beans are soft (can be cooked for up to 2 – 3 hours).

At the end add salt, pepper and serve.
