Preparation of the coffee milk mousse: Put 400ml of milk and the coffee beans in a pot, bring to a boil and leave to infuse for about 30 minutes. Strain the beans and boil 200ml of this coffee milk with 100g of sugar and half of the lotazoon powder together again briefly. Pour the still warm liquid into a top siphon, fill with a cartridge and spray evenly into four glasses. Then put them in a cold place. Rinse out the top siphon, as it is also needed for coffee mousse.Preparation of the coffee mousse: Analogous to the preparation of the coffee milk mousse, the coffee is briefly boiled with 50g sugar and the remaining lotazoon. Also put the warm coffee in the top siphon, fill it with a cartridge and put it in the refrigerator to cool for about 1 hour.Making the milk foam: Stir the emulzoon powder into 200ml of cold milk and pour it into a wide bowl. With the help of an electric milk frother, create a foam on the surface. Skim off the foam every now and then and create new foam.

Serving: Spray the coffee mousse from the siphon on top of the coffee milk mousse in the glasses. Place the milk foam as the third layer on top, creating a beautiful crown.
