Sweet and Sour Marinade:

For the marinade, chop 2 slices of pineapple, place in a bowl with 2 tablespoons of the juice (reserve the rest for sauce). Peel ginger, grate on the spot to pineapple. Cut pepperoncino in half, remove seeds, chop finely, add with aceto, vinegar, honey, oil and spices and stir everything together very well. Pour half of the marinade over the meat and marinate it for at least 1 hour with the lid closed (in the refrigerator).

For the sauce, bring the remaining marinade to a boil in a pan, mix the cornflour with the remaining pineapple juice and 1-2 tablespoons of water, add to the sauce form with the tomato ketchup, bring to a boil while stirring, season the sauce. Finally, cut the remaining pineapple slices into pieces and add to the sauce.

Grill the meat, bring the sauce to the table.
