Pasta dishes are simply always delicious!
Pasta dough: Prepare all ingredients into a smooth dough. Form a ball, wrap in plastic wrap and rest in the cool for about One hour. Next, roll out thinly in a pasta machine and cut noodles from it.
Make the pasta al dente in enough salted water, quench and saute in olive oil. Season with salt and pepper and fold in the chopped parsley just before serving.
Arrange the pasta in a deep dish, pour the sauce (see below) over it and garnish with shaved Parmesan cheese and fresh basil leaves.
Vegetable sauce: sauté the shallots with the garlic in olive oil until translucent and add the paradeis pulp. Add the dried tomatoes, glaze briefly and fill up with the tomato juice. Season with salt and pepper and cook a little. Add the diced peppers and zucchini. Add the olives and cook briefly. Season with pepper, thyme leaves, salt and balsamic vinegar.
