For the blue cheese topped with apple sabayon, mix egg yolks with sugar and apple juice and beat over steam until foamy. Cut the blue cheese into pieces, spread on ovenproof plates and cover with sabayon.

Bake in the preheated oven at maximum top heat until golden brown and serve immediately.
