For the carrot soup with parsley dumplings, clean and chop carrots, shallots, ginger and chili (remove seeds).

Sauté in hot olive oil. Sauté curry powder briefly. Add soup and coconut milk and simmer for 15-20 minutes. Puree with a blender and season with salt and pepper.

Beat the soft butter until fluffy. Add egg, semolina, parsley, nutmeg and salt, mix well and let stand for about 15 minutes.

Form dumplings with 2 coffee spoons and place on a damp cutting board. Bring salted water to boil, add gnocchi at the same time, simmer gently for about 10 minutes and let stand for 10 minutes.

Serve the carrot soup with parsley dumplings and sprinkle with chives.
