PREPARATION Preheat the oven to 220 °C (top heat). PREPARATION Mix the curd cheese with cornstarch, powdered sugar, egg yolks, rum, vanilla sugar and lemon zest until well blended. Beat the egg whites lightly with the granulated sugar until they form snow. Fold the snow into the curd mixture. Core the apricots and cut into wedges. Butter a deep plate, spread the curd mixture on it and cover with the apricot wedges. Place in the oven and bake at maximum heat until golden brown. Sprinkle gratin with powdered sugar and place a scoop of apricot sorbet or vanilla ice cream in the center.
