Clean, rinse and chop the salad ingredients. Mix them together as you like or arrange them next to each other on salad plates. For the sauce, mix the egg with a whisk, while stirring all the time, slowly stir in the sherry, salt, sugar, melted butter, orange juice and juice of one lemon. Stir the sauce in a hot water bath until the mixture begins to thicken. Then let the sauce cool down. At the end stir in the whipped cream and bring to the table with the leaf salad.
