For the quick bean stew, dice shallot, bell bell pepper and tomatoes. Sauté shallot in olive oil.

Add bell bell pepper, tomatoes and spices and simmer for 10 minutes.

Add the beans to the vegetables in the pot, just let them get hot and season with vinegar.

The quick bean stew goes well with baked pumpkin and potato wedges and crispy fried bacon.
