For the Gluten Free Marble Cake, grate the zest from half the lemon. Separate eggs. Beat egg whites until stiff peaks form.

Beat yolks, butter, powdered sugar, vanilla sugar, a little rum and grated lemon zest until fluffy.

Mix the flour with the baking powder and fold into the mixture. Finally, fold in the beaten egg whites.Pour part of the batter into a greased and floured cake pan.Mix the second part of the batter with cocoa and spread on the light batter. Run a fork through the dough once to create the marble effect.

Bake the marble cake in the oven preheated to 200°C for about 30-40 minutes.
