For the marinade:


Bring water with salt to a boil. Add frozen peas. Make at low temperature for 8 min. Drain and cool. Cut drained mushrooms in half. Rinse apple. Cut unpeeled apple in half. Cut out core. Dice apple. Peel tomatoes, remove seeds and chop coarsely. Cut peeled onion into rings. Mix all ingredients carefully. For the marinade, stir together oil and vinegar. Season with salt, pepper and sugar. Rinse parsley. Drain well (leaving 2 stems) and chop finely. Add to marinade. Pour marinade over lettuce and mix well. Arrange in a baking dish. Garnish with the parsley left behind.

Serve for lunch with roast pork and boiled potatoes.
