For the zucchini soup, peel and dice the onion and sauté in butter. Peel, press and add garlic. Pour in one liter of water.
Peel, coarsely dice and add zucchini. Sprinkle in soup seasoning and salt. Bring to a boil and cook for about 10 minutes, then remove from heat, puree and put back on.
Wash and chop the parsley and add with pepper. If necessary, thicken the zucchini soup with grated potato.
