Instructions:

(this recipe can be prepared with roast pork as well).

Crush juniper berries and peppercorns and mix with salt and pepper. Rub the meat with the herb mixture and place in a large enough bowl. Pour the red wine over it. Add the cloves and bay spice. Cover and let stand for one night.

Rub the meat well dry and sear it all around in the hot butter fat. Then continue roasting in the oven heated to 200 °C for 25 min.

Continue roasting for 40 min. at 180 °C with the lid closed. Keep basting with the marinade.

When the meat is tender, remove and keep warm. Add the rest of the red wine to the gravy and let it boil. Add the elderberry juice or elderberry berries to the sauce, cook a little bit. Stir the whipped cream with the flour and add. Let it boil briefly while stirring. Mix in the butter flakes.

Cut meat into slices, arrange on warmed plates and pour sauce over. Serve with Handwerksbürschle.

Toast the bread cubes in butter until golden. Squeeze the grated potatoes well and mix with cornstarch, eggs, onion, garlic and salt. At the end add the bread cubes. Fry the potato mixture in portions in hot oil until golden brown.

Our tip: As an alternative to fresh herbs, you can also use frozen ones – these are also characterized by a fresh taste.
