The leaves are accurately plucked from the stems, sorted out, washed and dried on a sieve. Either mix 2 salt, pepper, egg yolk, oil and vinegar to a smooth vinaigrette and dress the leaves with it or simply mix it with salt, pepper, mild vinegar and oil and garnish the leaf salad with hard-boiled, quartered or sliced eggs.
