First, peel the radish and cut into fine, elongated strips with a peeler. Salt and let stand for about 5 minutes.

Squeeze out and simmer with grated potato, sugar, vinegar and vegetable stock in a pot for 5-8 minutes.

Assemble the beer radish with cold butter and season to taste with nutmeg, salt and pepper.
