For the vegetable pan, heat the oil in a frying pan and roast the vegetables over low heat, stirring constantly, for about 5-6 minutes. Add salt and pepper.

For the sauce, mix the yogurt, chili, coriander, salt and pepper. Arrange the vegetable pan and serve the yogurt sauce on the side.
