For the Tyrolean Gerstl soup, peel and chop the onion. Sauté in hot oil.

Mix in the pearl barley and roast a little. Pour in soup, add bay leaf and marjoram and cook gently for about 30 minutes.

Peel the carrot and cut into small cubes, cut the cleaned leek into rings and add to the soup.

Cook on low heat for a few more minutes. If the soup becomes too thick, add a sip of water. Stir frequently.

Cut the bacon into small cubes and warm it in the hot soup. Season with salt and pepper.

Wash and finely chop the parsley and sprinkle it over the Tyrolean Gerstl soup. Serve hot!
