– Norbert Hylla-Grahl 1. chop coriander greens (except for one stalk). Peel and finely dice onion. Peel, halve and pit avocado and finely mash the flesh with lime juice and salt.

Stir onion, cilantro greens and lime zest into the cream and season with cayenne pepper. Dice tomatoes and sprinkle on top of the crem with the remaining cilantro. Cover and set aside to cool.

Cut tuna into large cubes and skewer on lemongrass stalks. Roast in the hot oil for a total of 4 minutes, season with salt, season with pepper and bring to the table with the avocado cream.
