For the sweet pasta bake, cook the pasta with a pinch of salt until al dente. Quench and drain.

Wash the apricots and rub them dry. Cut them in half and remove the core. Slit the vanilla bean lengthwise and scrape out the pith. Grate the orange peel and squeeze out the juice. Place the apricots in a saucepan with the sugar, spices and orange zest and steam over low heat for 12 minutes. Remove the cloves and star anise.

For the wine foam, separate the eggs. Beat yolks and eggs with sugar, orange juice, Malaga and cinnamon over steam until the sauce reaches a creamy consistency.

The mixture must not begin to boil!

Butter a baking dish and pour in the cooked pasta. Spread the apricots on top and finish with the wine foam. Bake the sweet pasta casserole in the preheated oven at 180 °C for about 15 minutes.
