For the apple snow, wash the apples and remove the core. Then cut the fruit into slices and cook them together with the cinnamon stick, lemon juice and about 150 ml until soft.

Puree the mixture and let it cool down. Meanwhile, whip the cream until stiff. Carefully fold the whipped cream into the apple mixture and decorate with chopped pistachios.
