For the Sugo with vegetables dice tomatoes, peppers, zucchini. Cut onion into small cubes, chop basil and oregano coarsely.
Heat oil in a frying pan and fry onion until golden brown. Add minced meat and brown well all around. Add tomatoes, peppers and zucchini and sauté well.
Add water or soup and simmer on low heat for about 15 minutes. Mix in the herbs. Season the sugo with salt and pepper and serve as desired.
