For the sprout pancakes, peel and dice onion, clean basil and chop finely. Mix the mung bean sprouts with the onion and basil.

Add the whole wheat flour and egg, season with pepper and herb salt and stir well to make a smooth dough.

Shape the dough into flat pancakes about the size of a hand and fry in hot oil over medium heat until golden brown. Drain the sprout pancakes on paper towels and serve.
