For the spice cake, cream Thea with the sugar and vanilla sugar. Beat in the yolks one at a time and then add the soft chocolate.

Mix the flour with the gingerbread spice and baking powder and stir into the dough alternately with the milk and rum.

Finally, gently fold in the beaten snow and pour the whole mixture into an oil-lined loaf pan.

Bake at 180 degrees for about 50 minutes. Allow to cool slightly, then remove from the pan and coat with icing.
