For the spelt roulade, mix flour with baking powder. Separate eggs, beat snow until firm and set aside. Cream honey with yolks, stir in cardamom.
Stir in amaretto, fold in flour and beaten egg whites and pour the mixture onto a baking tray lined with baking paper, bake at 180 degrees in a preheated oven for about 15 minutes.
Tip onto a work surface together with the paper, peel off the paper, immediately spread with jam and roll up.
