Fillet sea bass and divide each fillet. Make asparagus spears and saute in olive oil. Confit tomatoes in oil, remove, chop and keep in lukewarm oil. Saute finely chopped onion, small garden onion and garlic clove together with the thyme.

Add the oil with the confit tomatoes. Season and roast the fish fillets in olive oil.

Presentation: Place the asparagus spears in a fan shape on the plate, add 3 pieces of fish fillet and pour the confit tomato sauce over them.
