For the snowballs, sift the flour into a bowl and stir 2 tablespoons into the almonds (second bowl). Mix the starch and salt with the flour.

Mix the room-warm butter until creamy and stir in the powdered sugar. Stir the pulp of the vanilla pod into the butter-sugar mixture.

Now roughly stir the almonds, as well as the flour-starch mixture into the butter with a pastry spatula. Then knead a homogeneous, firm dough with your hands.

Wrap the dough well in plastic wrap and refrigerate for at least 2 hours. Form 2-3 rolls of the same thickness from the dough and cut them into slices about 2cm thick.

Roll each slice into balls between the palms of your hands and place them on a baking tray lined with baking paper with enough space between them.

Bake the snowballs at 150 °C convection oven for about 12-14 minutes. Sift the powdered sugar into a bowl for rolling – if you like, you can also add a packet of vanilla sugar.

Let the snowballs cool briefly and then roll them in the powdered sugar.
