Cook long grain rice in boiling salted water for about 20 minutes. Add the peas about 5 minutes before the end of the cooking time.

Rinse chicory and cut in half lengthwise. Steam in a little boiling salted water with a little bit of lemon juice for 5 to 6 minutes until soft.

Finely dice the onion. Fry with minced meat in hot oil. Season. Add tomatoes and let them bubble up. Cook on low heat for about 5 minutes. Season the mince sauce. Serve chicory halves with sauce and pea long grain rice.
